Description
Ways to use Calolea’s Strawberry Balsamic Vinegar…
Rice & Bean Salad
- 1 15 oz can of black beans (or pinto or ½ can of each)
- 3 mini bell peppers or one medium bell — Red, Yellow and/or Orange (not green)
- 1 scallion
- 3 Tablespoons salsa
- 1 Tablespoon Calolea Garlic Olive Oil
- 1 Tablespoon Calolea Meyer Lemon Olive Oil
- 2 Tablespoons Calolea Strawberry Balsamic Vinegar
- ¼ teaspoon salt (or to taste)
- 1 teaspoon Smoked Paprika (mild/sweet)
- 1 cup cooked rice (white, brown or mixed)
Remove seeds and stem from peppers. Chop in small cubes.
Chop scallion in small rounds (white and green parts).
Rinse canned beans in sieve under running water to removed cooking juices.
Combine all ingredients. Ready to serve or refrigerate.
Variation: Summer Fresh Corn & Bean Salad
Substitute raw corn kernels for rice. Slice off the cob. Use 2 to 3 ears of fresh corn depending on the size of the ears.

With any of these recipes, make a dressing starting with our balsamic. Add a dash of sweetener, we like brown sugar and honey. Cracked salt and pepper to taste. Then add any of our Extra Virgin Olive Oils, and whisk.
