Description
If you go through olive oil bottles faster than you can count, then the gallon size is meant for you. It’s significantly less expensive than buying small bottles, and a lot of our customers like decanting it into their own containers.
Olive Serrano Vinaigrette
1/4 c. fresh squeezed lemon juice
1/4 c. fresh squeezed lime juice
2 cloves crushed garlic
1/3 c. sundried olives
1 Serrano chili
2 Tablespoons basil, de-stemmed
2 Tablespoons fresh oregano leaves, de-stemmed
1/2 cup of extra virgin olive oil (gallon size!)
Celtic sea salt to taste
Freshly ground pepper to taste
Slice the Serrano in half lengthwise, remove seeds and coarsely chop. In a blender, add fresh squeezed lemon juice, lime juice, garlic, olives and Serrano chili. Blend until smooth. Turn blender to low and add olive oil (gallon bottles comes in handy here) in a steady stream until emulsified. Add basil and oregano, pulse blender off and on just to lightly process the herbs into the dressing. Taste for seasoning and adjust salt and pepper as necessary.
If you can’t find Serrano chilis, use a jalapeno instead. This really gives your salad a kick. Serving suggestion: Slice 4 medium Roma tomatoes and 1 medium avocado and drizzle vinaigrette on top. Garnish with fresh basil or oregano leaves or a few whole, pitted olives. This recipe also makes a great marinade for vegetables. Serrano chilis are antibacterial and a stimulant. Eaten raw they have a vitamin C content 6 times the amount of an orange. They improve the circulatory system and increase metabolic processes.
