Cured Olives We try to encourage people to cure their olives without using lye which used by the commercial olive canning industry to leach out the bitter flavors in the olives and to soften them. Lye is a toxic chemical that is used in many industrial applications and is the primary ingredient in most pour-in drain cleaners. It’s a caustic substance that destroys nutrients and can cause severe burns if it comes in contact with skin. Olives have been around for millennia as a staple food source in Mediterranean climates. Some trees in the Middle East are literally thousands of years old. There are plenty of time-tested methods to cure without lye; they’ve just become somewhat overlooked in our modern fast food society.

For dry salt curing we recommend Mission Olives which we’ll have later in the season around November.

New Report: Evaluation of Olive Oil Sold to Restaurants and Foodservice

Our new report finds that almost all olive oils pass the most common chemical tests, but most of these oils fail tests that are rarely used in quality control (sensory, DAGs and PPP).  Sensory panels from Spain, Italy and Australia tasted the oils and found some to be lampante (lamp oil) a grade that is not fit for human consumption under USDA standards.  Two of the 21 samples in the study were adulterated with inexpensive canola oil.  The report recommends that food distributors incorporate sensory, DAGs and PPP into their quality control efforts, that the USDA add DAGs and PPP to the voluntary US standard, and that further research be pursued to develop faster, better and cheaper methods of analysis.

Monica, Michael, and Ethan Keller in their orchard.
COOC members since 1998, the Keller family, Michael, Monica and Ethan have worked very hard to grow their company over the last decade. And they have been very successful. In 1999, Monica and Michael bought 10 acres in Loma Rica and started Calolea Olive Oil. The first year they produced 80 gallons, but their timing was perfect as Californians were hungry for quality olive oil. One of the pioneering participants in the COOC’s booth at the NASFT shows, the Keller’s have made some very good decisions about marketing their products, which include extra virgin olive oil, vinegars and bath products. Calolea has also received seal certification every year for the last decade and with a far-flung farmer’s market network from San Francisco to Palo Alto to Truckee, Calolea has also become a well-known name in the markets of northern California.

Having just planted another 200 Tuscan variety trees, the Keller’s now are guardians to 150 acres of olive trees. When asked about this year’s crop, Michael has two words, “Really good!” Indications are that the crop will be 150% over last year’s performance.  While the Keller’s are a very busy family, they have carved out the time to build a tasting room, which will open in the spring of 2011.
