Roast Chicken with Calolea Meyer Lemon Olive Oil

1 6 lb. to 8 lb. roasting chicken cleaned and prepped for cooking
Herbs of choice
Place chicken in a roasting pan (clay pot with a lid is the best)
Drizzle Calolea Meyer Lemon Olive Oil on the complete chicken
Sprinkle herbs of choice over the chicken
Add your favorite roasting potatoes or vegetables around the chicken if desired the last 45 minutes.
Cover chicken (foil will work) and cook at 350 degrees 1 ½ to 2 hours depending on size.
Save the drippings and use for dipping with your meal or refrigerate, then skim the fat and you have a delicious base for soup stock.
