Honey Roasted Chicken
2 1/2 lb. Chicken, quartered
3 Tablespoons Calolea olive oil
2 Tablespoons orange juice
2 Tablespoons honey
1 1/4 teaspoons paprika
Preheat oven to 425 degrees. Rinse and pat chicken dry. In a small bowl combine olive oil, orange juice, honey and paprika. Brush chicken pieces generously with mixture. Place chicken on a rack in a roasting pan.
Bake 15 minutes. Reduce oven temperature to 400 degrees. Baste chicken again. Continue roasting and basting until skin is crisp and juices run clear when meat is pierced, 30-40 minutes.
