Blood Orange Cake with Orange Buttercream Frosting

Blood Orange Cake

1 box of yellow or white cake mix (follow directions on the box – water, oil, and eggs).

Substitute oil for Calolea Blood Orange Olive Oil.

Mix as directed on box and follow baking directions.

Or prepare as Cupcakes. To make orange and white swirled cupcakes, take about a third of the cake batter, color it orange and then marble it in the cupcakes.

Orange Buttercream Frosting

2 lbs. powdered sugar

3/4 lbs. unsalted butter (3 sticks) Make sure butter is soft.

1/2 C. shortening

2 t. orange or blood orange extract (blood orange extract can be found at speciality cooking stores or online)

1/4 C. water

3/4 t. salt

Place all ingredients into mixing bowl, blend on low speed until juI actually took about a third of the cake batter, colored it orange and the marbled it in the cupcakes. The cupcake came out swirled orange and white.st combined. Scrape down sides of bowl and continue mixing on medium – high speed until light and fluffy, about 5 – 7 minutes.
